tofu salad recipe

Tofu Salad 

Preparation time     : 20 minutes+

To prepare this recipe we need :

Ingredients :

2 teaspoons Thai sweet chilli sauce
½  teaspoon grated fresh ginger
1 clove garlic, crushed
2 teaspoons soy sauce
2 tablespoons oil
250 g [8 oz] firm tofu
105 g [3 
½ oz] snow peas (mangetout), cut
into 3 cm [1 ¼ inch] lengths
2 small carrots, cut into matchsticks
105 g [3% oz] red cabbage, finely
shredded
2 tablespoons chopped peanuts


  • Preparation :

1- Place the chilli sauce, ginger, garlic, soy
sauce and oil in a small screw-top jar and
shake Well. Cut the tofu into 2 cm [ 
¾ inch]
cubes. Place the tofu in a medium bowl,
pour the marinade over and stir. Cover
with plastic wrap and refrigerate for
1 hour.


2- Place the snow peas in a small pan,
pour boiling water over and leave to stand
for 1 minute, then drain and plunge into
iced water. Drain well.


3- Add the snow peas, carrots and cabbage
to tofu and toss lightly to combine.
Transfer to a serving bowl or individual
plates, sprinkle with peanuts and serve
immediately.
