Preparation time   : 15 minutes
Total cooking time: 1 hour 20 minutes
Makes : 1


Ingredients :
To prepare a perfect honey cake recipe we need :

3 CUPS (375 g/12 oz) self-raising flour
1 CUP (250 g/8 oz) sugar
2 teaspoons ground ginger
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon bicarbonate of soda
1 teaspoon vanilla essence
2 eggs, lightly beaten
1 cup (350 g/11 oz) honey
1 cup (250 ml/8 fl oz) sunflower oil


Preparation :

1- Preheat the oven to warm 170°
(325°F/Gas 3). Lightly grease a 24 x 9 x 10
cm (9 x 3 
½ x 4 inch) loaf tin and line the
base with baking paper.

2- Sift the flour into a large bowl, make a
well in the centre and add all the
e remaining ingredients. Pour in 1 cup (250
ml/8 fl oz) hot Water, stir thoroughly to 
mix. then beat until quite smooth.


3- Spoon the mixture into the prepared
loaf tin and lightly tap the tin on the bench
to remove any air pockets. Bake tor 1 hour
20 minutes, or until a skewer inserted ted
into the centre comes out clean. Ii the
cake starts to brown too much, cover
loosely with foil halfway through cooking.
Leave to cool in the tin for 20 minutes,
then invert onto a wire rack and cool
completely.
