Chocolate Hazelnut Omelette

Preparation time   : 20 minutes
Total cooking time: 15 minutes
Serves  : 4

Ingredients :
To prepare a perfect chocolate hazelnut omelette we need :
3 tablespoons finely chopped hazelnuts
60 g [2 oz] dark chocolate, roughly
4 egg yolks
3 tablespoons caster sugar
5 egg whites
30 g [1 oz] unsalted butter
1 tablespoon cocoa powder

Preparation :

1- Stir hazelnuts in a dry pan over medium
heat until golden. Set aside.
2- Place the chocolate in a small heatproof
bowl over a pan of simmering water. Stir
until melted. Allow to cool slightly. 
3- Using electric beaters, beat the egg
yolks an melted chocolate and beat well.
4- Beat the whites with a pinch of salt until
stiff peaks form. Fold a third at ti time into
chocolate mixture. Fold through the 
hazelnuts. Preheat grill.
5- Melt the butter in a medium frying pan.
When butter is foaming pour in the

chocolate mixture.. Swirl pan until mixture
evenly covers base. Cook over low heat
for 1-2 minutes or until set half-way
through and bubbles have formed en top.
Place under grill, cook until golden.
Divide into 4 wedges and place on serving 
plates. Dust with sifted cocoa.serve with
Vanilla ice cream and fresh or frozen
