Pesto-Filled Mushrooms ( Quick recipe)
To prepare a perfect pesto-filled mushrooms we need :
Place 2 cups (60 g/2 oz) of fresh basil
leaves, 3 crushed cloves of garlic,
½ cup (80 g/2 ⅔ oz) of toasted pine nuts
and ½ cup (50 g/1⅔ oz) of grated
Parmesan cheese in a food processor and
process until smooth, Gradually add
⅓ cup (80 ml/2¾ fl oz) of olive oil and
process until all the ingredients are well
combined. Remove the stalks from
14 small mushrooms (small enough for
finger food) and brush the mushrooms
lightly with macadamia nut oil. Cook, fan-
side down, on a preheated char-grill or
barbecue until the mushrooms are lightly
browned. turn the mushrooms over and
spoon a level tablespoonful of the
prepared pesto on the top of each
mushroom. Serve immediately.
Makes 14 ^filled mushrooms.
